Sometimes salads get the boot during the fall but when you add some warm roasted veggies, it makes for a perfect Fall Salad. 

Fall Harvest Salad
Serves 4
A hearty salad to warm your fall up with!

Ingredients
  1. 4 cups spinach
  2. 2 cups quinoa
  3. 2 sweet potatoes diced
  4. 3 beets diced
  5. 1 cup pumpkin seeds
  6. 1 cup guacamole
  7. 2 cups grilled chicken
Instructions
  1. Toss sweet potatoes, beets, and pumpkin seeds in a little oil (I used avocado, for high smoke point) and salt I always use Redmond Real Salt
  2. Roast at 425 for 25 min
  3. While veggies are roasting arrange the salad with spinach, quinoa, chicken.
  4. Top with roasted veggies and pumpkin seeds, add a dollop of guacamole and top with dressing of your choice!
