Sometimes salads get the boot during the fall but when you add some warm roasted veggies, it makes for a perfect Fall Salad.
Fall Harvest Salad
A hearty salad to warm your fall up with!
- 4 cups spinach
- 2 cups quinoa
- 2 sweet potatoes diced
- 3 beets diced
- 1 cup pumpkin seeds
- 1 cup guacamole
- 2 cups grilled chicken
- Toss sweet potatoes, beets, and pumpkin seeds in a little oil (I used avocado, for high smoke point) and salt I always use Redmond Real Salt
- Roast at 425 for 25 min
- While veggies are roasting arrange the salad with spinach, quinoa, chicken.
- Top with roasted veggies and pumpkin seeds, add a dollop of guacamole and top with dressing of your choice!
