When I want pizza- I love making these little “pizza bites” although some may argue no crust + no cheese = not pizza. To them, I say… whatevs. I’m calling it pizza. SWEET POTATO PESTO PIZZA *For the “crust” Use a large, round sweet potato. Slice into 1/4” rounds. Spread avocado oil on both sides and salt & pepper to taste. Bake at 400° for 25 min. *Pesto Sauce 1 c Arugula 1 c Pine nuts ½ c Fresh basil ¾ c Extra Virgin Olive Oil Juice of ½ Lemon 1 tsp Sea Salt *Combine all ingredients in food processor. Yields 1 ½ C Pesto Sauce *Toppings Fresh basil, chopped. Artichoke hearts. Bacon, chopped (sugar free) Spinach, chopped Just spread sauce, and toppings on the sweet potato rounds and enjoy!
