First, I sliced a zucchini into slices a little thicker than my knife, they soften up while you grill them so no stress if you think it won’t bend. I tossed the slices in a little avocado oil & sea salt. I grilled them on my George Foreman! But you can also bake them at 400° for about 5 minutes, not too long! While grilling I just heated up some organic sweet italian precooked sausages (True Story brand from Costco) and sliced them into 1 inch pieces, I got about 4 slices from one sausage. Then I spread a little of my Arugula Pesto Sauce (see last post) on the zucchini. Then you roll up the pieces of chicken sausage onto the pesto sauce covered zucchini and secure with a toothpick! Its delectable!
