Maple Glazed Sweet Potatoes
5-6 sweet potatoes
2/3 cup pure maple syrup
1 lemon (juiced)
1 tsp salt
4 tbsp melted butter
Mandolin slice potatoes & line up in casserole dish.
Glaze with a mixture of the syrup, lemon juice, salt & melted butter.
Bake at 400 for 60 minutes covered in foil.
Remove foil & bake for 20 more minutes at 425 to crisp up the top.
