Garlic Smoked Salmon & Mediterranean Quinoa
Salmon
Ingredients:
Fresh lemon juice
Garlic
Salt
Directions:
Squeeze fresh lemon juice, garlic & salt on top.
We smoke ours but you could also bake it (425 for 25 minutes).
Quinoa
Ingredients:
4 cups cooked quinoa
2 lemons, juiced & zested
1 tsp minced garlic
1 cup fresh chopped basil
2 cups sliced cherry tomatoes
3 diced cucumbers
1/2 finely diced onion
Salt & pepper to taste
Directions:
Mix all ingredients together & top with salmon. Delish!
